The practical question
How should a patty formulator evaluate a rice-bran binder?
Compare cooked recovery, dimensional shrinkage, sensory quality, and cost per saleable pound under matched conditions. Research on stabilized bran and extracted fiber provides application context, while Stabil’s reported patty figures need their own trial documentation.
Evidence: Academic research · Microwave-stabilized rice bran · Academic research · Extracted rice-bran fiber · Regulatory reference · U.S. product identity
A concrete yield example from the conference brief.
Stabil conference brief · Company-reported resultThe supplied brief reports these values for beef patties and attributes front-page trial work to PHD Technologies. They are a company-provided summary, not an independently verified result presented by this website.
Applied conditionally to 1,000 pounds of raw product, those yields represent 810 versus 828 cooked pounds. The additional 18 pounds must be evaluated with ingredient cost and acceptable finished quality. Explore the calculation.
What the wider patty literature contributes.
Academic burger work examines microwave-stabilized bran in a lower-fat formulation. Research on tteokgalbi, a ground-meat patty product, uses extracted rice-bran fiber. These are different ingredient/process combinations, not corroboration of the brief’s precise numbers. Burger study · Ground-meat patty study
Use the literature to identify useful measurements, then use a current-grade trial to establish the performance that can be claimed for StabilSRB.
Measure more than the scale reading.
- Portioning: raw weight distribution, forming behavior, and handling loss.
- Cooking: matched equipment, endpoint, and cooling/weighing interval.
- Dimensions: diameter and thickness changes, alongside retained weight.
- Eating quality: firmness, juiciness, flavor, and visual acceptance.
- Composition: required meat, fat, protein, and non-meat ingredient targets.
Record the denominator for every percentage. “Cook loss,” “cook yield,” and “shrinkage” can refer to different measurements and should not be used interchangeably.
The product name is part of the formulation.
U.S. standards distinguish ground beef and hamburger from beef patties that may include binders or extenders. Do not assume a binder-containing recipe can retain any existing product name. Have the regulatory team review the actual formula and label. 9 CFR 319.15
Common questions
Questions from formulators.
Is 1.8 percentage points the same as 1.8% more yield?
No. The absolute change is 82.8 minus 81.0, or 1.8 percentage points. Relative cooked output increases by about 2.22% in this conditional example.
Does this mean a guaranteed 2–4% saving?
No. A raw-formulation saving and a reduction in cost per cooked pound are separate calculations. Use measured yield and your own costs.
Can we call the reformulated product hamburger?
That depends on the applicable standard and formula. The cited U.S. standard does not permit binders in hamburger; obtain product-specific regulatory review.
