The practical question
Can rice bran be evaluated as a soy replacement in chicken nuggets?
A published chicken-nugget experiment evaluated defatted rice bran replacing soy protein and erythorbate, with comparable acceptance and lipid stability in the studied frozen product. That supports an application trial, not a universal soy or preservative substitution claim for StabilSRB.
Evidence: Academic research · Defatted rice bran from Irgovel, Brazil
A useful external study, with a defined ingredient.
Veiga and colleagues studied DRB from Irgovel in Brazil. The formulation and frozen-storage conditions belong with its results; the experiment is not a test of current StabilSRB. Read the study annotation.
For commercial development, decide whether the project targets binder replacement, antioxidant performance, or both. Changes to preservation require their own technical validation rather than inference from sensory acceptance alone.
Keep the reported nugget result in its own context.
Stabil conference brief · Company-reported resultThe company brief reports this nugget comparison. Its absolute change is 1.3 percentage points; the patty example’s 1.8-point figure should not be applied to nuggets.
Treat color and bite as design requirements.
The supplied brief flags darker color at higher poultry inclusion. Establish an acceptable range with your actual meat source, seasoning, cooking method, and finished-product appearance.
- Record the grade, dose, and whether the inclusion basis is total formula or meat portion.
- Hold raw portion size, coating system, and pickup constant during the meat-core comparison.
- Evaluate cooked interior color as well as exterior appearance.
- Measure texture after the intended consumer reheating method, not only immediately after production.
If the project includes removing soy, verify the complete ingredient list, supplier declarations, and cross-contact controls before making a finished-product claim.
Separate the two sources of retained weight.
A nugget can become heavier because the meat retains more moisture or because more coating adheres. Track these separately so the economic explanation matches the actual mechanism.
For unbreaded poultry patties, focus on cooked weight, shape, handling, and eating quality. For breaded products, record core weight, coating pickup, total cooked recovery, and any separated-component analyses using a consistent method.
See the coatings guide for the distinct DRB application in flour replacement and oil uptake.
Common questions
Questions from formulators.
Does the academic study establish a StabilSRB starting rate?
No. It used a different commercial defatted bran. Ask Stabil to recommend a trial range for the current grade and your poultry system.
Can coating oil data support a meat-core yield claim?
No. The material location and outcome differ. Keep those measurements, sources, and claims separate.
Should we expect a lighter or darker product?
Evaluate the actual formulation. The supplied Stabil brief identifies darkening as a consideration at higher poultry inclusion; a coating study cannot answer interior-color performance.
